The Mojito is the quintessential palate cleanser and all around sip of refreshing goodness. My Mock Mojito maintains the freshness of the mint and sour bite of lime with a hint of sweetness… so delicious that you’ll never miss the alcohol.
Mint leaves – at least 4 or 5 for muddling, more for garnish
2 tsp. sugar (you can try substituting, but I think you are going to need the real thing for muddling)
3 wedges of lime
8 ounces lemon-lime soda (can substitute diet or lemon-lime seltzer)
Put mint leaves into the bottom of a tall glass. Add sugar and squeeze the juice of 2 lime wedges over the mint and sugar. Add the lime wedges and muddle (fancy term for crushing or mashing the sugar, lime and mint until the sugar is dissolved and you can smell the mint releasing oils). If you don’t have a muddler, you can use a spoon or even the handle of a utensil – just be careful with the end you hold! Then, pour soda over the mixture and garnish with more mint leaves and remaining lime wedge. Enjoy!
